    German Pancake

    For this Mother's Day brunch idea, you will need:

    • A half cup of flour (all purpose is best)
    • A half cup of whole milk
    • Three large eggs
    • One half cup of your favorite fruit jam
    • Two tablespoons of unsalted butter
    • Two tablespoons of lemon juice (if you like)
    • Two tablespoons of powdered sugar (also called confectioner's)
    • One quarter teaspoon of kosher salt
    • One half a teaspoon of vanilla extract (real vanilla works best)
    • A large cast iron skillet

    Directions for this Mother's Day brunch idea:

    1. Preheat your oven to 400°.
    2. Whisk eggs in a large bowl and add flour. Continue whisking until smooth. Add the salt, vanilla and milk. Whisk until mixed into the batter and set the bowl aside.
    3. Put the butter into the cast iron skillet and put it into the preheated oven until it's melted. Pour the batter into the skillet with the melted butter and put the mixture back in the oven.
    4. Bake for about 15 minutes, or until the pancake is golden and puffed.
    5. Drizzle the lemon juice over the hot pancake and spread the jam. Top with the confectioner's sugar and serve.


    Citrus Fruit Salad with Honey and Mint

    Here is another Mother's Day brunch idea. For this recipe, you will need:

    • One orange (navel oranges work best)
    • One grapefruit (ruby reds look the prettiest)
    • Four sprigs of fresh mint
    • Two teaspoons of honey

    Directions:

    1. Cut the peel and the pith (the outside of the orange and grapefruit segments) off of the grapefruit and orange.
    2. Slice the whole fruit so that you have "fruit rounds"
    3. Arrange alternating orange and grapefruit slices on plates and drizzle with the honey. Garnish with the mint before serving.
