Summer Squash Recipes for Refreshing Treats

When springtime rolls around, I always look forward to planting my garden full of delicious fruits and vegetables. One particular vegetable that I love to grow and cook with is summer squash. They grow quite easily and can be used in quite a few recipes.

Summer squash is called such because it is full of freshness in its late summer peak, though it is available all year round. There are plenty of ways to use summer squash, as it can be sauteed, grilled, pan-friend, or broiled. It is also very healthy for you.

You don't have to peel summer squash, but you can if you'd like. Great spices to add to summer squash recipes are marjoram, dill, basil, and pepper.

The following recipes will give you a great start for delicious meals this summer.

Stuffed Summer Squash

This is a delicious summer squash recipe that does not require much time to make.

Ingredients:

  • 2 summer squash, cut in half lengthwise
  • 1 tablespoon olive oil
  • 2.5 tablespoons butter
  • 1/3 cup chopped onion
  • 1/4 cup grated Parmesan cheese, divided
  • 3 tablespoons bread crumbs, divided
  • 1 tablespoon of fresh parsley
  • Salt and pepper (to taste)

Instructions:

  • Remove the pulp from the squash but chop up the pulp and save.
  • Cook the shells in the hot oil in a skillet for 2 minutes on each side. Remove and let them cool.
  • Add 1/2 tablespoon butter to the skillet and add the pulp from the squash, as well as the onion. Cook until tender.
  • Stir in the Parmesan cheese, 2 tablespoons breadcrumbs, parsley, salt and pepper to taste.
  • Pour the mixture into the squash shells.
  • Mix the remaining Parmesan cheese and bread crumbs. Sprinkle lightly over the squash. Also, apply the remaining butter.
  • Broil the squash for about 3 minutes, or until light brown. Serve.


Summer Squash Bake

Squash casseroles are very satisfying and well liked by many people. For this summer squash recipe, you will need:

  • 2 to 3 summer squash, cut into cubes.
  • 1 cup finely chopped onion
  • Salt and pepper to taste
  • Water
  • Butter
  • 1 cup crumbled saltine crackers
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs

Directions:

  • In a large saucepan, add the squash, onion, salt and pepper. Add just a little amount of water. Cover the pan and cook squash until tender, stirring some.
  • When it is tender, drain and return to the pan and stir in the butter.
  • Use butter to grease a 1 1/2 quart baking dish.
  • Add the crumbled crackers into the squash mixture and stir.
  • Then turn into the buttered casserole.
  • Pour the milk over the squash and sprinkle with the cheese and breadcrumbs.
  • Bake at 350 degrees, uncovered, for 20 minutes.


Sauteed Summer Squash

For a simple side dish, sauteed summer squash will be a delightful summer squash recipe.

All you need for this recipe is 2 to 3 summer squash, extra virgin olive oil, dill, garlic powder, salt and pepper to taste, and 1 cup shredded cheddar cheese.

Instructions:

  • Cut the squash into slices and add to 2 tablespoons of olive oil in a frying pan.
  • Season the squash with the garlic powder, dill, salt, and pepper to taste.
  • Saute until the squash is tender and golden brown.
  • Sprinkle with the cheddar cheese and allow time for it to melt.
  • Remove from the pan and add to a serving dish. Serve hot.
