Extreme Mocha Chocolate Cake

This dessert is excellent for the chocolate lovers in your family!

  • 1 box moist chocolate cake mix
  • 1 box instant chocolate pudding
  • 3/4 cup sour cream
  • 1/4 cup mayonnaise
  • 1 or 2 eggs
  • 2 shots of espresso
  • 1 bag of chocolate chips
  • 3 tablespoons milk
  • 1/2 cup confectioners' sugar

Directions for this Christmas dessert recipe:

  • In a large bowl, pour the chocolate cake mix in. Add as many eggs, water, and oil as directed on the box. Add the box of instant pudding, sour cream, mayonnaise, espresso, and 1 cup chocolate chips. Mix with a mixer until smooth.

  • Pour into an ungreased baking pan or greased Bundt baking pan. Bake as directed on the cake box. (Normally at 350 degrees F for about 40 minutes.)

  • FROSTING: Once you've removed the cake, let it cool. In a saucepan, pour all but 1/2 cup of the rest of the chocolate chips into the pan along with 3 tablespoons of milk. Melt the chocolate chips, stirring continually. This usually takes a few minutes.

  • Remove the cooled cake and put on a serving platter. Frost the cake with the chocolate frosting and sift some confectioners' sugar on the top. Add the remaining chocolate chips on the top of the cake. Enjoy!

  • Drain the pineapple and reserve the juice in a measuring cup. Add enough water to the cup to equal 3/4 cup in total.

  • In a saucepan, add the pudding, powdered milk, juice mixture, and orange juice. Cook until it boils, stirring often. Remove from the stove.

  • Stir in coconut extract and marshmallows until melted. Add the pineapple and stir.

  • Gather serving dishes and transfer the dessert to individual servings. Cover and put in the refrigerator for a couple of hours. You can garnish the dessert with cool whip and flaked coconut. Enjoy!
