Easy Kids' Christmas Cookies Recipes - Delicious Sweet Treats to Bake

I have discovered that my grandchildren love to make cookies with a cookie press - they love the fun and ease of squeezing out the cookies - and they can change the shape of the cookie any time they want, simply by changing the disks.



Here is an easy kids' Christmas cookies recipe for Butter Cookies.

Ingredients

  • 1 cup butter, softened
  • 1 cup sugar
  • 2 egg yolks
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all purpose flour

    Instructions:

  • Cream butter and sugar until fluffy.
  • Add egg yolks and vanilla; beat well.
  • Pipe dough onto an ungreased baking sheet and bake in a 400 degree F oven for 10 minutes.

    This cookie dough can also be rolled out thinly and cut with a cookie cutter. Bake as above and, when they are cooled, they can be sandwiched together with seedless raspberry jam and frosted on top with icing made from confectioner's sugar, water and a little lemon juice.

    Chocolate Cookies

    Ingredients for this easy kids' Christmas cookies recipe:

  • 1 3/4 cups all purpose flour
  • 4 tablespoon cocoa powder
  • Pinch of salt
  • 2 cups butter, softened
  • 2 cups sugar
  • Beaten egg to mix

    Directions:

  • Sieve flour, cocoa and salt into a mixing bowl and rub in butter until mixture resembles crumbs.
  • Stir in sugar and add enough beaten egg to bind.
  • Dough can be used in a cookie press or rolled out thinly and cut with a cookie cutter.

    Another favorite and easy kids' Christmas cookies recipe is a bar-type cookie that you first bake and cut into bars later.

    My all-time favorite - Lemon Bars!

    Ingredients:

  • 2 sticks butter, softened
  • 2 1/4 cups flour, sifted
  • 1/4 cup plus 1/3 cup confectioner's sugar
  • 4 large eggs
  • 2 cups sugar
  • 6 tablespoons lemon juice
  • Grated rind of 1 lemon
  • 1/2 teaspoon of baking powder

    Directions:

  • Spray a 13x9 baking pan with non-stick spray.
  • In a food processor or electric mixer, blend the butter, 2 cups of flour and 1/4 cup of confectioner's sugar until dough forms a ball.
  • Press the dough into the bottom of the pan, making a light rim around the edge and bake for 15 minutes at 350 degrees F.
  • Whisk eggs, sugar, lemon juice and rind, 1/4 cup flour and baking powder until smooth.
  • Pour over crust and spread to the edge.
  • Bake for another 30 minutes until the filling has set and the edge is slightly golden.
  • Cool completely and sift 1/3 cup confectioner's sugar over the top.
  • Cut into squares.

    Here is another easy kids' Christmas cookies recipe favorite that the children like to make at Christmas - and enjoy licking the bowl!

    Quick Fudge Cookies

    Ingredients:

  • 4 squares unsweetened baking chocolate
  • 1/2 cup butter or margarine
  • 2 cups sugar
  • 2 eggs
  • 1 tablespoon milk
  • 1 teaspoon vanilla
  • 1 cup flour, sifted
  • 3/4 cup chopped walnuts (optional)

    Directions:

  • On a low heat, melt chocolate and butter in a pan.
  • Stir in the sugar, then add the eggs, milk and vanilla, beating until well blended.
  • Add the flour and walnuts, if using.
  • Spread in a greased 13x9 pan and bake at 375 degrees F for 25 to 30 minutes.
  • Allow to cool in pan and cut into squares while still warm.
