Diabetic Birthday Cake Recipes - Ideas to Consider

Blend the following ingredients in a food processor for a couple of minutes (or until smooth and creamy):

  • 1 cup raw any type of nuts
  • 1-2 tablespoon brown rice syrup or artificial sweetener (available at most health stores)
  • 1 pinch sea salt
  • 1 teaspoon lemon zest (optional; orange zest is another option)
  • 1/4 to 1/2 cup apple juice or orange juice or water (or sufficient to reach desired consistency)
  • Remember that the mixture will thicken as it sits


SMOOTH AND CREAMY FROSTING

Here is another frosting recipe which you could use as part of diabetic birthday cake recipes.

  • 1/2 cup low fat cottage cheese or cream cheese, sieved
  • 1/8 teaspoon salt (preferably sea salt)
  • 1/2 tablespoon butter, melted (organic is ideal)
  • replacement sweetener equivalent to 1/2 cup sugar
  • 1 teaspoon almond, vanilla or caramel extract


Method / steps

Mix all ingredients together and then beat until smooth. Use a spatula or icing knife to spread the frosting over the cake. This recipe frosts one 10 inch cake

DIABETIC MIXED NUT CAKE

  • 1/2 cup cream (double thick or long life)
  • 1 egg
  • 1 tablespoon artificial sweetener

  • 2 cup cake flour
  • 2 teaspoon baking soda or baking powder
  • 1/2 teaspoon cloves
  • 1/2 teaspoon cinnamon
  • 1 cup dates, cut fine (soften the dates in hot water and a 1/2 teaspoon bicarb)
  • 1 1/2 cup unsweetened apple juice
  • 1 cup nuts


Method / steps

Cream the cream and slowly add egg, sweetener and vanilla. Mix until smooth then add sifted flour, baking soda, cloves and cinnamon. Gently stir in the dates, apple juice and nuts. Bake in round or loaf pans for 1 hour at 350 degrees Fahrenheit.

DIABETIC FRUIT CAKE

  • 2 cup mixed fruit
  • 1 1/2 cup water
  • 1/2 cup orange or apple juice
  • 1 cup unsweetened applesauce
  • 2 eggs, beaten
  • 2 tablespoon liquid sweetener
  • 1/2 cup cooking oil
  • 2 cup self-rising flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla


Method / steps

Slowly boil fruits in water until water is absorbed, then add orange / apple juice, applesauce, sweetener, eggs and oil, and then mix thoroughly well. Blend the flour, baking soda, cinnamon and nutmeg, and then add this second mixture to the first mixture, together with the vanilla, and again mix well. Pour into greased 9-inch pan and then bake at 350 degrees Fahrenheit for 25 to 30 minutes.

DIABETIC CAKE WITH TOPPING

Here is yet another diabetic birthday cake recipe which you could try.

  • 3 large eggs
  • 1/2 cup soft butter
  • 1 cup unsweetened pineapple juice
  • 2 1/2 cup cake flour (organic, unbleached is ideal)
  • 3 cup grated carrots
  • 1 teaspoon baking soda (or bicarb)
  • 2 teaspoon baking powder
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon

    TOPPING:

  • 1 cup crushed, drained pineapple
  • 1 teaspoon cinnamon


Method / steps

For this diabetic birthday cake recipe, you will need to prepare a greased and floured 9x13 inch pan.

Beat together the eggs, butter and pineapple juice, then add the flour, baking soda, baking powder, nutmeg and cinnamon. Beat well while stirring in the grated carrots. Mix well and pour the mixture into the pan.

Mix the drained pineapple and cinnamon and sprinkle over the cake mixture. Bake for 25 to 30 minutes at 350 degrees Fahrenheit, or until the cake turns brown.
