Some Favorite Thanksgiving Recipes - Foods Many People Use and Love

My favorite Thanksgiving recipes are the ones that can be made ahead and reheated, either in the microwave, oven, crock pot or buffet server.

This mashed potato recipe is easy to make and can be held for a couple of days in the refrigerator and reheated in a crock pot. The recipe makes 15 servings, so you should have plenty for everyone.

Ingredients:

  • 5 lbs. potatoes, peeled and quartered
  • 1 (8 oz.) package cream cheese, softened
  • 1 cup sour cream
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 beaten egg
  • 3 tablespoon melted butter

Directions for this favorite Thanksgiving recipe:

  • Cook the potatoes until done, about 20 minutes - or if you slice them thinly as I do, about 10 minutes!
  • Drain, return to the pan and shake over a low heat until dry.
  • Mash them well and mix in the seasonings, cream cheese, sour cream and egg.
  • Place into a greased 9x13" baking dish and drizzle with the butter.
  • Allow to cool, cover with plastic wrap and refrigerate for up to 3 days.
  • On Thanksgiving day, take the dish out of refrigerator about 3 hours before you want to serve them. Scoop the potato mixture into a crock pot.
  • Cover and cook on a low heat for 3 to 4 hours, stirring once or twice during heating. They will be ready to serve when you are.


Scalloped Oysters

A family favorite of ours after spending Thanksgiving in Pennsylvania Dutch country many years ago is Scalloped Oysters. This favorite Thanksgiving recipe is so easy to make, and delicious. I buy fresh oysters in cans from the seafood counter in the supermarket. Two cans will feed about 8 people as a side dish.

Ingredients for this favorite Thanksgiving recipe:

  • 1 pint oysters
  • 3 tablespoons heavy cream
  • 3 tablespoons milk
  • 1 cup Ritz crackers, broken into pieces
  • 1/2 cup breadcrumbs
  • 1/2 cup melted butter
  • 2 tablespoons sherry (optional)
  • Salt and pepper to taste

Directions:

  • Toss cracker pieces and bread crumbs in the melted butter and use them to cover the bottom of an 8-inch square buttered baking dish.
  • Cover with half of the oysters and half of the cream and milk.
  • Repeat for second layer.
  • Drizzle the oyster liquid and (sherry, if used) over the top.
  • Cover with remaining crumbs and bake at 450 degrees for 25 to 30 minutes. Makes 4 servings.


Candied Yam Casserole

Another of the favorite Thanksgiving recipes is this candied yam casserole, which couldn't be simpler to make.

Simply peel 6 or 8 yams and cut into 1/2 inch slices. Place them in an ovenproof skillet or shallow casserole and sprinkle with 1 1/2 cups of brown sugar, 1 1/2 cups of water and 1/4 teaspoon of salt.

Cover and bake for 40 minutes at 350 degrees, then uncover and bake for a further 30 minutes until sauce is syrupy.

Carrot and Pineapple Jell-o Salad

Would it be Thanksgiving without a carrot and pineapple jell-o salad? Of course not! Here is this favorite Thanksgiving recipe, which is served with a dollop of mayonnaise.

You will need:

  • 1 envelope unflavored gelatin
  • 1/2 cup reserved pineapple juice
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 1 cup boiling water
  • 1/4 cup lemon juice
  • 8-oz can crushed pineapple, well drained and juice reserved
  • 2 carrots, coarsely grated

Directions for this favorite Thanksgiving recipe:

  • In a large bowl, sprinkle the gelatin over the reserved pineapple juice and let it stand for 2 to 3 minutes until softened.
  • Pour sugar and salt on top of the gelatin mixture and add boiling water. Stir until sugar and gelatin are dissolved.
  • Add lemon juice and stir again to blend.
  • Add pineapple and grated carrot.
  • Pour into an 8" square glass baking dish. Cover and chill until firm - about 4 hours.
  • To serve, cut into squares and top with a dollop of mayonnaise. Makes 9 servings
