Vegetarian Thanksgiving Recipes - Simple Dishes for Your Dinner Menu

Are you looking for some simple yet delicious vegetarian Thanksgiving recipes?

It's Thanksgiving and you've just found out that one or more of your guests are vegetarian. Don't panic, you have several options to choose from when catering to someone who won't be enjoying the classic turkey dinner with you.

The most popular turkey substitute to use in a vegetarian Thanksgiving recipe is a Tofurky roast. This is a 'turkey' made from wheat protein and tofu. When seasoned properly, it is a popular substitute for the real thing. You simply spread oil or margarine on the roast, sprinkle it with poultry seasoning and pepper, and follow the cooking instructions on the package.

If you are careful not to use any meat products, such as bacon or bacon grease or chicken stock, in the recipes for your side dishes, then the Tofurky may be the only substitution you will have to make. Be sure to avoid serving stuffing that is made with chicken broth, and avoid any gelatin recipes or anything containing marshmallows, which are made with gelatin. It goes without saying that you shouldn't serve any meat gravy to vegetarian guests - if you must have gravy, make it with vegetable stock.

The following is a good alternative to the traditional vegetarian Thanksgiving Tofurky and is easily made using a crock-pot. The onion soup and cranberries make a sauce to serve with the entree.

For this vegetarian Thanksgiving recipe, you will need:

  • 1 Tofurky roast (if this is still frozen it will take 3 hours to cook; defrosted, it will take 2 hours)
  • 1 pack of dry vegetarian onion soup mix
  • 16 oz of vegetable broth
  • 1 tablespoon of garlic powder (this is optional)
  • 1 can of cranberry sauce (this can be smooth or chunky)

    Instructions:

    Place the pack of onion soup mix in the pot, then add the garlic powder, veggie broth as well as the cranberry sauce. Stir well to mix.

    Add the Tofurky roast to the pot and cook using strong heat, basting with the sauce every 30 to 45 minutes. When done, cut the roast into thin slices and serve with the sauce.

    If you don't like the idea of preparing a tofu 'turkey', then perhaps a vegetable goulash which is also suitable for vegans would be an option for your vegetarian Thanksgiving recipe. To make enough for four people, you will need:

  • 2 teaspoons of olive oil
  • 1 medium onion, thinly sliced
  • l green bell pepper, thinly sliced
  • 8 oz of fried tofu, cut into squares
  • 8 oz of sliced mushrooms
  • 1 clove of garlic, chopped
  • 2 (14.5 ounce) cans of whole peeled tomatoes, chopped. Reserve the juice.
  • 2 teaspoons of paprika
  • 1 cup of red wine
  • 2 teaspoons of dried oregano
  • 2 teaspoons of tomato puree
  • 1 teaspoon of sugar
  • Salt
  • Pepper

    For this vegetarian Thanksgiving recipe, first heat the olive oil in a large skillet over medium heat, and saute the onion, mushrooms and green pepper. Mix in the garlic and paprika, then add the tomatoes with their juice. Add the wine, oregano, and tomato puree. Bring the mixture to a boil.

    Reduce heat to low, and simmer 25 minutes, until thickened. Five minutes before serving, stir in the tofu and sugar. Season with salt and pepper. Serve with rice or noodles.

    A vegetarian Thanksgiving recipe for delicious mashed potatoes that is so yummy it may replace any other mashed potato recipe you normally use - simply add finely chopped sauteed fresh spinach or kale along with roasted garlic and some of the oil it was roasted in to regular mashed potatoes. Be sure to make enough for second helpings as the resulting dish is delicious. You can also make this dish with mashed cooked white beans instead of the potatoes if you are serving another potato side dish.

    For a delicious change from the usual green bean and French fried onion casserole, try vegetarian green beans.

    For six servings of this vegetarian Thanksgiving recipe, you will need:

  • 4 leeks, trimmed and well washed, then cut into 1/2" slices
  • 1/3 cup of chopped fresh dill
  • 1 lb of fresh green beans, cleaned and cut into 1" pieces
  • Extra-virgin olive oil
  • Salt and pepper to taste

    Instructions for this vegetarian Thanksgiving recipe:

  • Saute the leeks with olive oil over a medium heat, stirring continuously until golden but not browned, add the dill, then stir the green beans into the pan and cook for a few minutes until the beans are brightly colored and crisp. Serve immediately.

  • If you don't want the hassle of cooking at the last minute, the leeks can be cooked ahead of time and stored in the refrigerator and the beans can be blanched. Mix together with the dill and reheat just before serving.
